Yes. Kopi luwak is halal. The intact beans are mutanajjis (in contact with impurity), not inherently najis, and can be purified through washing.
Per the Fatwa of the Indonesian Ulema Council (MUI) No. 07/2010, kopi luwak is halal to consume, produce, and trade, provided:

Kopi luwak is crafted from coffee cherries eaten and then defecated by the Asian palm civet (luwak). The civets' digestive enzymes shape the beans' flavor.
The Asian palm civet primarily eats coffee cherries, selecting the ripest and sweetest — which lifts the quality of the final product. Their diet also includes insects, small reptiles and fruit.
"Cat poop coffee" is a nickname for kopi luwak (civet coffee). It isn't made from poop — it's made from coffee beans that pass through the luwak's digestive system. The process: the luwak eats ripe cherries, digests the fruit pulp, and the protected beans pass through intact; farmers then collect, wash, sun-dry, hull, sort and roast them.
